Breakfast Hash Serves 2

This breakfast hash is full of flavor and has a great balance of nutrients to power you all morning. Crispy potatoes supply fiber and vitamins, and taste delicious with the sweet apples. The sausage contains protein to fill you up, and the honey, herbs, bell pepper, and onion add bursts of flavor.

Directions

  1. Put the olive oil in a large nonstick skillet or frying pan, and set it over medium-high heat. When the oil is hot, add the garlic and onion and sauté for 2–3 minutes, until the onion becomes soft and fragrant.
  2. Add the cubed potatoes and sausage meat to the pan. Reduce the heat to medium and sauté for 10 minutes, crumbling the sausage into small pieces with a wooden spoon as it cooks. Season the mixture with the salt, pepper, and dried herbs.
  3. Add the apple, bell pepper, and honey to the pan and sauté, stirring occasionally, for 10–12 minutes, until the sausage is browned and the potatoes are cooked through (they should be fork tender).
  4. Create two wells in the hash and crack an egg into each well. Cover the skillet with a lid, and cook for 3–4 minutes, or until the eggs are cooked to your preferred doneness.
  5. Divide the hash mixture between two bowls and put one egg on top of each one. Sprinkle the chopped scallion evenly over each bowl and serve immediately.

Variation Use Italian sausage and add Kalamata olives, tomatoes, and feta for a Mediterranean Hash!
